The Olive known by the botanical name Olea Europaea, meaning "European olive", is a species of small tree found traditionally in the Mediterranean Basin. The species is cultivated in all the countries of the Mediterranean, as well as South America, South Africa, India, China, Australia, New Zealand, Mexico, and the U.S.
In New Zealand Olive trees are grown for cultivation and also for landscape design, they can be trained and pruned into some incredible shapes.
Batch #1 has been sourced from Mangawhai with the help of my friend, Louie. This grove was cleared to make way for a new housing development and was definitely worth saving. As Olive trees go, these were big, the wood is very dense and when split it smells just like freshly pressed Olive Oil.
My friend, Noel (with his greek heritage), has fallen in love with using Olive wood for flavouring his myriad of lamb dishes. Its robust flavour is perfectly matched with spring lamb or the older hoggets. Just wait till you smell it.
